ONE of Adelaide's newest restaurants will be the culmination of a long-term dream of co-owner Tim Burvill.
When his A Hereford Beefstouw restaurant opens next week, it will be stocked with beef bred and raised at his Damgaard Farm at Lucindale.
An extensive range of South Australian produce will also be on the menu.
"It is the realisation of a dream for me," Mr Burvill said.
"To be able to do this in Australia is something I've always wanted to do."
The restaurant is a joint enterprise between Mr Burvill and his Danish business partner Lars Damgaard.
They also run the Damgaard Farm together as part of their SA Cattle Company business.
The first to open in Australia, the restaurant will become the 15th in the A Hereford Beefstouw chain popular in Europe.
"There has been no expense spared in creating the restaurant," Mr Burvill said.
Former Alma chef Richard Moretti will be in the kitchen with the company's "best manager from Europe" Rune Søndergaard in charge of front-of-house.
The partnership between Mr Burvill and Mr Damgaard began when they met while Mr Damgaard was looking for Australian wine to stock his Danish restaurants.
As well as being the owner and winemaker at RockBare Winery, Mr Burvill and his wife Sarah also run Herefords on their properties in the Adelaide Hills and Upper South East.
Mr Damgaard was fond of Herefords because his parents bred them in Denmark. He arranged to export the Burvills Hereford beef to Europe.
In 2007, they formed a partnership to buy Damgaard Farm.
"It was a natural progression for our business to eventually open a restaurant here in South Australia," Mr Burvill said.
"I thought that Adelaide would love this kind of restaurant, and since our wine and farming operation is based in SA, it seemed crazy to export all of our production to Europe without giving the locals a chance to experience what we do.
"Not only are we paddock-to-plate with our Hereford beef, we're also grape-to-glass."
Hereford beef, dry-aged for a minimum of 45-days on the bone, will be a feature on the menu.
The fine dining restaurant will open to the public in Hutt Street on September 10.
