BIG COST: University of New England associate professor in meat science Peter McGilchrist said with high retail prices for beef and lamb producers needed to ensure there was good value in their carcases in eating quality and yield.

Breeding the most profitable sheep and cattle into the future will require selecting for both high yielding and high quality animals, according to University of New England associate professor of meat science Peter McGilchrist, Armidale, NSW.
